Any foreigner who comes to Vietnam will be surprised by the number of and various type of cafes found on every street corner. Yes, Vietnamese people love coffee and have a habit of drinking it after breakfast.
Vietnam was once a French colony, so the coffee culture was brought over from France. Coffee cultivation in Vietnam was also developed by the French around 1850. Thanks to the suitable conditions of climate and soil, Vietnam is now a coffee powerhouse and proud to be the second largest producer in the world.
The way that Vietnamese people brew coffee is very unique. We let coffee drip slowly through a stainless steel filter, then add condensed milk to adjust the sweetness. The reason for using condensed milk is that there was no fresh milk when coffee spread in Vietnam around the 19th century. Surprisingly, the rich sweetness of condensed milk turned out to match the bitterness of Robusta species, the vast majority of Vietnamese coffee. Even though fresh milk is easy to buy nowadays, condensed milk is still an essential part of Vietnamese coffee. There is also another special way of brewing coffee, in which, whipped cream made from egg yolk and condensed milk is topping on coffee.

ベトナムに来る外国人は、誰でも街角のいたるところに路上カフェやおしゃれなカフェが立ち並んでいることに驚かされると思います。そう、ベトナム人はコーヒーが大好きで、朝ご飯を食べた後、コーヒーを飲む習慣があります。
昔ベトナムがフランスの植民地だったので、コーヒー文化はフランスから持ち込まれたものです。ベトナムにおけるコーヒー栽培もフランス人によって1850年頃に始められました。気候や土壌がコーヒー栽培に適しているおかげで、現在、ベトナムはコーヒー大国となって、生産量世界第2位を誇っています。
ベトナムコーヒーの淹れ方も特徴的で、金属フィルターでゆっくり落としていき、練乳を用いて甘さを調整します。練乳を用いる理由は、ベトナムにコーヒーが広まった19世紀頃には新鮮な牛乳がなかったからです。ところが、練乳の濃厚な甘味はベトナムコーヒーの主流であるロブスタ種の苦味と意外とマッチしているようで、牛乳を簡単に入手できるようになった現在でも練乳はベトナムコーヒーに欠かせないものです。また、卵の黄身と練乳を一緒に泡立てたクリームを乗せるという独特な淹れ方もあります。
